Shelby Straley, RDN, CD

As a Registered Dietitian Nutritionist, Shelby is thrilled to be serving her hometown community in her dream job. She is a mother of two, and has the opportunity to raise her children in the same neighborhood she grew up in surrounded by close family, friends and lots of love. Shelby is a text book foodie; she loves to browse recipes, cook for her family, bake with her kiddos, travel to new places and experience unique foods, and of course teach others about how food can assist in their personal health.

Shelby graduated from Utah State University with a bachelor's degree in Nutrition and Dietetics in 2016. Then, completed an internship in Arizona through the Utah State Dietetic Internship Program. Shelby earned hands-on experience at Verde Valley Medical Center outside Sedona and a Long Term Care facility in Phoenix, Mesa School District's Food and Nutrition Program, WIC offices surrounding the Phoenix area and the AZ Weight Loss Clinic.

Shelby found her passion for nutrition after being diagnosed with Celiac Disease at the age of 14, requiring a lifelong gluten-free diet. As a result of Celiac depleting her body of nutrients for years, she had nine knee surgeries in six years along with countless other medical procedures to earn her health back. This experience is the cornerstone of her love for nutrition. Shelby has true empathy towards her patients who are on their own path back to health through nutrition, as she did and continues to do. As a Dietitian, Shelby can provide Medical Nutrition Therapy to aid management of many diseases, as well as any personal nutrition goals one might have.
